This is a new project where we will be making some long term storage of food from 5 gallon buckets, mylar bags and oxygen absorbers.

We’re a trusting group of people when it comes to restaurant food safety whether we’re going through a fast food drive through or being seated at a fine dining establishment. While it’s true, safe food establishments exist in abundance as evidenced by the number of restaurant patrons who have never contracted a food borne illness, but just how safe are they and can we know they’re safe?

Here in the USA we take food safety for granted. As we enter a dining establishment, rarely do we look for permits, licenses, or food safety stickers; if we did, people would think we were strange. We assume the proper health authorities will protect us from food contamination and harm in all circumstances, but we have no hard evidence to back up our assumptions.

The US Food and Drug administration has two primary goals in mind and that is to prevent food borne illnesses and ensure the safety of patrons and employees.

Food establishments are subject to inspections in all states but we don’t know the criteria and how often inspections occur. Restaurant inspections are performed by local, county, or state health officials but we don’t have access to the details of violations unless a facility gets shut down for critical violations and that information comes from local news outlets.

The information age of the Internet provides an abundance of information on food safety, but data on food inspection is still outdated on many web sites. Still, it gives us a measurement tool of how to gauge the standards used to determine food safety.

Generally, food safety data reveals that improved technology and reinforcement of hygiene in restaurants shows an overall safety improvement in food establishments. Anticipated health inspections also contribute to cleaner facilities and better food storage methods in compliance with inspections.

Safety is graded on a point system with the highest score being 100. In the food safety, “restaurant inspections used in this study, scores between 69 and 92 provided a mean score of 82.2. Commonly cited non-critical violations involved facilities in poor repair and surface cleanliness for equipment that didn’t come into contact with food preparation.

If an establishment has more than four critical violations, it is downgraded and given a specific amount of time to correct the violations. A common critical violation in this study involved food storage and toxic items such as cleaning fluids stored
